Ingredients

  • 7 slices bread
  • 1 can artichoke hearts (not in oil)
  • 1 cup mayonnaise
  • 1/2 cup grated Parmesan or Romano cheese

Instructions

  1. Cut the crusts from the bread slices.
  2. Quarter each bread slice.
  3. Spread the bread pieces on a cookie sheet.
  4. Toast both sides under the broiler until golden brown.
  5. Combine mayonnaise and grated cheese to make the topping mixture.
  6. Spread a light layer of mayonnaise mixture on each toasted bread piece.
  7. Quarter the artichoke hearts.
  8. Place a quarter of an artichoke on each toast piece.
  9. Top each with a teaspoon of the mayonnaise mixture.
  10. Place under the broiler until the tops are golden brown.
  11. Serve immediately.
