Ingredients

  • 1 1/2 cups canned asparagus
  • 1 teaspoon salt
  • 4 tablespoons flour
  • 2 tablespoons water
  • 1/2 cup cracker crumbs
  • 1 egg
  • 1 cup milk
  • 3 tablespoons butter or butter substitute
  • 3 hard-cooked eggs

Instructions

  1. Combine milk, flour, butter or butter substitute, and salt in a saucepan. Cook over hot water until thick and smooth.
  2. Add canned asparagus and chopped hard-cooked eggs to the mixture. Mix quickly and lightly.
  3. Place cracker crumbs in a shallow dish. Shape the asparagus mixture into small croquettes, then roll them in cracker crumbs.
  4. Dip each croquette in a diluted beaten egg (egg mixed with water).
  5. Roll the croquettes again in cracker crumbs to coat thoroughly.
  6. Fry the croquettes in deep fat heated to 390°F until browned and crispy.
