Ingredients

  • 2 (14 1/2 oz.) cans asparagus, chopped
  • 1 egg, beaten
  • 1/2 cup flour

Instructions

  1. Drain the canned asparagus and chop if necessary.
  2. In a mixing bowl, combine the chopped asparagus with flour.
  3. Add the beaten egg to the mixture and stir until well combined.
  4. Heat 1/4 cup of oil in a skillet over medium heat.
  5. Drop spoonfuls of the batter into the hot oil.
  6. Cook until golden brown on one side, then turn and cook the other side.
