Ingredients

  • 1 hen
  • 4 (1 lb.) cans tomatoes
  • 1 Tbsp. salt
  • 1/4 tsp. red pepper
  • 1 can tomato paste
  • 2 large onions
  • 8 large potatoes
  • 1/3 tsp. black pepper
  • 2 Tbsp. vinegar
  • 2 (17 oz.) cans corn

Instructions

  1. Boil the hen in a small amount of salted water until cooked.
  2. Remove the meat from the bone and return it to the stock.
  3. Add whole potatoes to the stew and cook until tender, then remove and mash them.
  4. Add the minced onions, tomato paste, canned tomatoes, salt, red pepper, black pepper, and vinegar at the same time as the potatoes.
  5. Return the mashed potatoes to the stew and cook for about 5 hours.
  6. Add the canned corn near the end of cooking.
