Auntie'S Lemon Pie

Ingredients

  • 1 cup sugar
  • 2 heaping tablespoons flour
  • pinch of salt
  • 2 cups milk
  • 2 egg yolks
  • 1/3 cup fresh lemon juice

Instructions

  1. Cook all ingredients except lemon juice in the top of a double boiler until it begins to thicken.
  2. Add lemon juice and cook a little longer until the mixture is well combined and slightly thickened.
  3. Cool the lemon custard before pouring into a baked pie shell.
  4. Top with stiffly beaten egg whites and brown in a 350°F oven until golden.
