Ingredients

  • 1 1/2 cups sugar
  • 4 tablespoons cornstarch
  • 3/4 cup juice from cherries
  • 3 cups canned pitted tart red cherries (water pack)
  • 1 tablespoon butter
  • 1/4 teaspoon red food coloring
  • pastry for 2 crust (9-inch) pie

Instructions

  1. Combine 3/4 cup sugar with cornstarch in a bowl.
  2. Stir in cherry juice and cook over medium heat, stirring occasionally, until the mixture thickens and bubbles.
  3. Remove from heat and cool for 1 minute.
  4. Add remaining sugar, cherries, butter, and red food coloring to the mixture.
  5. Let the filling stand while preparing the pastry crust.
  6. Line a 9-inch pie plate with pastry for the bottom crust.
  7. Fill the pie with the cherry mixture.
  8. Cover with the top crust, cut slits for steam to escape, and seal the edges.
  9. Bake at 400°F for 55 minutes until golden brown.
