Austin Spanish Rice

Ingredients

  • 1 cup uncooked rice
  • 3 Tbsp oleo
  • 1/2 green bell pepper, chopped
  • 1 small onion, chopped
  • 1 1/2 to 2 tsp salt
  • 2 Tbsp chili powder
  • dash black pepper
  • 1 can tomatoes and chilies or 1 can whole tomatoes
  • 1 lb lean ground beef
  • 1 tsp cumin
  • 1 1/2 cups water

Instructions

  1. Saute rice in oleo until light brown.
  2. Saute ground beef, chopped onion, and chopped green bell pepper until meat is done.
  3. Add salt, black pepper, cumin, tomatoes with chilies or whole tomatoes, and chili powder to the meat mixture.
  4. Mix together and add water.
  5. Cook for 5 minutes, then mix in the rice mixture.
  6. Place in a covered casserole dish.
  7. Bake, covered, in a 350°F oven for 1 to 1 1/4 hours.
  8. Serve with a green salad and hot garlic French bread.
