Ingredients

  • 1 cup mashed potatoes
  • 1 cup milk
  • 2/3 cup shortening
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 egg
  • 1 packet dry yeast
  • 5 1/2 cups sifted flour

Instructions

  1. Scald the milk and dissolve the shortening in it.
  2. Strain the mashed potatoes through a sieve into the milk mixture; let cool.
  3. In a large bowl, beat the egg and add the sugar, salt, and the milk mixture.
  4. Dissolve the dry yeast in 1/2 cup hot water and add it to the mixture.
  5. Add 1 cup of sifted flour at a time, mixing well after each addition.
  6. Rub the top of the bread and sides of the bowl with shortening and let the dough rise in a warm place until doubled in size, about one hour.
  7. Punch down the dough and shape half of it into 36 small balls.
  8. Place 3 balls into each cup of a 12-cup muffin tin.
  9. Let the dough rise again for about an hour.
  10. Bake in a 375°F (190°C) oven for 20 to 25 minutes until golden brown.
