Creamy and savory, this avocado eggs dish combines smooth mashed yolks with creamy cheese, topped with fresh avocado slices for a delightful brunch or snack.

Ingredients

  • 1 large ripe avocado
  • 8 hard-cooked eggs
  • 1/2 cup softened cream cheese
  • pinch of salt
  • pinch of pepper

Instructions

  1. Mash the yolks of the eggs with a fork.
  2. Add the softened cream cheese, 3/4 of the sliced avocado, lemon juice, salt, and pepper to the mashed yolks and mix well.
  3. Stuff the egg whites with the yolk mixture.
  4. Slice the remaining avocado thinly.
  5. Place a thin slice of avocado on top of each stuffed egg.
