Avocado Hummus

Ingredients

  • 2 avocados - peeled, pitted, and chopped
  • 1 (15 ounce) can chickpeas, drained
  • 1 medium tomato, chopped (optional)
  • 1 lime, juiced
  • 1/2 cup freshly chopped cilantro
  • 1/4 cup chopped red onion
  • 2 tablespoons tahini (optional)
  • 1 jalapeno pepper, seeded and chopped (optional)
  • 1 tablespoon olive oil
  • 3 cloves garlic, peeled and smashed
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt, or more to taste
  • 2 tablespoons water, or as needed (optional)

Instructions

  1. Combine avocados, chickpeas, tomato, lime juice, cilantro, onion, tahini, jalapeno pepper, olive oil, garlic, cumin, and salt in a large food processor; blend until smooth. Thin consistency with water if desired.
