Ingredients

  • 1 1/4 cups Monterey Jack cheese, grated
  • 3/4 cup grated mild Cheddar cheese
  • 1 (9-inch) deep-dish frozen pie shell
  • 1 (4 oz.) can diced green chilies
  • 1 cup half and half
  • 3 eggs

Instructions

  1. Spread the Monterey Jack cheese and half the Cheddar over the bottom of the pie shell.
  2. Sprinkle diced green chilies over the cheeses.
  3. In a bowl, stir together the half and half, eggs, and seasonings.
  4. Pour the mixture carefully into the pie shell.
  5. Sprinkle with the remaining Cheddar cheese.
  6. Cover the pie with foil and freeze if desired.
