Ingredients

  • 1 1/2 cups finely chopped bacon
  • 1 tablespoon margarine
  • 1/2 medium head lettuce, chopped
  • 3/4 cup flour
  • 10 cups chicken stock
  • 2 medium tomatoes, diced
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon white pepper

Instructions

  1. In an 8-quart pot, lightly sauté the finely chopped bacon.
  2. Do not remove the drippings.
  3. Add margarine and heat until melted.
  4. Add chopped lettuce and sauté for 3 minutes.
  5. Add flour and stir until well blended. Cook for 2 minutes.
  6. Add chicken stock, diced tomatoes, ground nutmeg, and white pepper.
  7. Heat until boiling, stirring to prevent sticking.
  8. When the mixture begins to boil, add half and half.
  9. Warm the soup, but do not boil.
