Ingredients

  • 1 eggplant
  • salt
  • freshly ground pepper
  • olive oil
  • 1 clove garlic
  • 1/4 cup tahini
  • 1/4 teaspoon ground cumin
  • 1 tablespoon parsley sprigs

Instructions

  1. Make tiny cuts in the flesh side of the eggplant.
  2. Sprinkle it with salt and set on a plate for 30 minutes.
  3. Rinse the eggplant with water and pat it dry.
  4. Heat the broiler.
  5. Brush the cut sides with oil and broil the eggplant as close to the element as possible for 5 minutes or until golden brown.
  6. Move the eggplant to about 6 inches from the element and continue broiling for 20 minutes or until very tender when tested with a fork.
  7. Leave to cool.

Tips & Substitutions

For a smokier flavor, consider grilling the eggplant instead of broiling. If you're short on tahini, you can substitute with Greek yogurt for a creamier texture. Adding a pinch of smoked paprika can also enhance the depth of flavor. Make sure to let the eggplant cool completely before blending; this helps achieve a smoother consistency. This dish pairs wonderfully with Mediterranean recipes for a complete meal.

Serving Suggestions

Serve Baba Ghanouj with warm pita bread or vegetable sticks for dipping. It complements well with dishes like Rosemary Grilled New Potatoes or can be used as a spread on sandwiches. Garnish with additional parsley and a drizzle of olive oil for an appealing presentation. This dish also makes a delicious addition to a mezze platter.

Storage & Reheating

Store any leftover Baba Ghanouj in an airtight container in the refrigerator for up to 4 days. If you want to reheat it, use a microwave on low power or let it sit at room temperature for about 30 minutes before serving. It can also be served cold, making it a great make-ahead dish.

Frequently Asked Questions

Can I make Baba Ghanouj ahead of time?

Yes, Baba Ghanouj can be made a day in advance. Just store it in an airtight container in the refrigerator. The flavors will deepen and meld overnight, enhancing the overall taste. Just remember to stir it well before serving to restore its creamy texture.

What can I use if I don't have tahini?

If you don’t have tahini, you can substitute it with equal parts of Greek yogurt or a blend of sunflower seeds and olive oil. This will give you a similar creamy texture, although the flavor will differ slightly. Adjust the salt to taste since tahini usually has a more pronounced flavor.

How do I know when the eggplant is cooked properly?

The eggplant is properly cooked when it's very tender and the skin has a slightly charred appearance. You should be able to easily pierce it with a fork. If the flesh is mushy and golden brown, it's perfect for blending into your Baba Ghanouj.
