Delightful olive canapes feature smooth pureed Greek olives infused with garlic and mustard, topped with chopped eggs and scallions, perfect for elegant appetizers or casual gatherings.

Ingredients

  • 1 lb Greek olives, pitted
  • 2 Tbsp olive oil
  • 4 hard-cooked eggs, mashed
  • pinch dry mustard
  • 1 clove garlic, crushed
  • pepper to taste
  • egg yolks, hard-cooked and chopped
  • scallions, minced

Instructions

  1. Put olives and olive oil into a blender; puree until smooth.
  2. Blend in mashed eggs, dry mustard, crushed garlic, and pepper to taste.
  3. Serve the olive mixture on crackers or mound in a dish with crackers on the side.
  4. Garnish with chopped hard-cooked egg yolks and minced scallions.
