Ingredients

  • 1/4 lb bacon, cut in 1 1/2-inch pieces
  • 1/2 cup chopped green pepper
  • 1 can (3 oz.) sliced mushrooms, drained
  • 6 large eggs
  • 1/2 cup canned Cheddar cheese soup, undiluted
  • 2 tablespoons fine dry bread crumbs

Instructions

  1. Place the bacon in a 9-inch pie plate and cover loosely with microwavesafe paper towel.
  2. Cook on High for 3 minutes, then drain off the fat, reserving 1 tablespoon in a small custard cup.
  3. Stir the chopped green pepper and drained mushrooms into the cooked bacon.
  4. Cover and cook on High for 2 minutes.
  5. In a bowl, beat the eggs and mix with the undiluted Cheddar cheese soup.
  6. Pour the egg mixture over the bacon, vegetables, and mushrooms.
  7. Sprinkle the fine dry bread crumbs on top.
  8. Microwave on High until the eggs are set, about 2-3 minutes, checking halfway through.
  9. Serve hot.
