Ingredients

  • 16-20 cherry tomatoes
  • 1 lb bacon
  • 1/2 cup mayonnaise
  • 1/3 cup green onion, chopped
  • 3 Tbsp grated Parmesan cheese
  • 2 Tbsp fresh parsley, chopped

Instructions

  1. Hollow out cherry tomatoes and drain upside down on paper towels overnight.
  2. Fry bacon until crisp.
  3. Drain bacon well.
  4. Crumble the bacon and mix it with mayonnaise, chopped green onions, grated Parmesan cheese, and chopped parsley.
  5. Fill the tomato shells with the bacon mixture.
