Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 egg
  • 1 cup sour milk
  • 2 tablespoons melted shortening

Instructions

  1. Sift flour once before measuring.
  2. Sift flour, cornmeal, sugar, baking powder, baking soda, and salt together.
  3. Beat the egg and add the sour milk.
  4. Combine the egg mixture with the flour mixture.
  5. Add the melted shortening and beat well.
  6. Fill greased muffin cups two-thirds full.
  7. Sprinkle the tops with uncooked diced bacon.
  8. Bake for 15 minutes in a 400°F oven, then set the muffins under the broiler to crisp the bacon.
