Ingredients

  • 16 oz. can new potatoes, drained
  • 6 oz. can sliced mushrooms, drained
  • salt
  • 4 slices bacon, cut into quarters
  • 2 Tbsp. butter
  • 1 Tbsp. salad oil
  • 4 chicken cutlets

Instructions

  1. Preheat the broiler.
  2. Slice the potatoes into 1/2-inch thick slices.
  3. Pat the potatoes dry with paper towels.
  4. Arrange the sliced potatoes in the bottom of a 13 x 9-inch broiler pan.
  5. Cover the potatoes with drained sliced mushrooms.
  6. Sprinkle lightly with salt.
  7. Top with bacon slices cut into quarters.
  8. Broil for 10 minutes, turning occasionally until bacon is crispy and chicken is cooked through.
