Instructions
- Preheat oven to 375°.
- Slice bottoms off apples and core. Butter a large glass or porcelain dish and sprinkle with 2 tablespoons of sugar.
- Arrange apples upright in dish.
- Fill the center of each apple with 1 teaspoon brown sugar, 1/8 teaspoon cinnamon and 1 piece of lemon peel.
- Rub the top of each apple with 1/4 tablespoon soft butter and sprinkle with more sugar. Sprinkle the dried cherries around apples and add vanilla bean and cinnamon sticks to the dish.
- Bake apples 30 to 45 minutes until soft.
