Creamy baked chicken enchiladas feature tender chicken, melted Monterey Jack cheese, and a rich sauce, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 stick margarine
  • 1 medium onion, chopped
  • 1 small can chopped green chilies
  • 1 small container whipping cream
  • 8 oz. cream cheese
  • 2 (10 oz.) cans chunk white chicken
  • 8 oz. shredded Monterey Jack cheese

Instructions

  1. Melt margarine in a skillet over medium heat.
  2. Saute chopped onion until translucent.
  3. Add chopped green chilies and cook for another minute.
  4. Add cream cheese and stir until melted and combined.
  5. Stir in chunk white chicken cans and mix well.
  6. Spoon 2 to 3 tablespoons of the chicken mixture into each tortilla shell.
  7. Roll up the tortillas and place seam side down in a lightly greased 13 x 9-inch baking dish.
  8. Top with shredded Monterey Jack cheese.
  9. Drizzle with whipping cream.
  10. Bake at 350°F (175°C) for 30 to 35 minutes or until golden brown.
