Ingredients

  • 1 1/2 cups cooked, chopped chicken
  • 1 can (10 1/2 oz.) cream of mushroom soup
  • 1 can (15 oz.) chicken gravy
  • 2 tablespoons chopped pimento
  • 1 tablespoon chopped onion
  • 1 cup sliced water chestnuts
  • 20 slices bread
  • 4 eggs
  • 2 tablespoons milk
  • 1 (10 oz.) bag potato chips

Instructions

  1. Mix the cooked, chopped chicken, cream of mushroom soup, chicken gravy, chopped pimento, chopped onion, and sliced water chestnuts together in a bowl.
  2. Cut the crusts off the bread slices.
  3. Spread the chicken mixture on 10 slices of bread and cover with the remaining 10 slices to form sandwiches.
  4. Wrap each sandwich individually in plastic wrap or wax paper and freeze until needed.
  5. At serving time, dip the frozen sandwiches into a mixture of beaten eggs and milk.
  6. Coat the sandwiches with crushed potato chips.
  7. Place the coated sandwiches on a buttered cookie sheet.
  8. Bake at 300°F (150°C) for 1 hour until golden and heated through.
