Ingredients

  • 2 lb. cubed cornbread
  • 2 lb. cubed homemade bread
  • 1 c. chopped celery
  • 1 c. chopped onion
  • 1/4 c. chopped fresh parsley
  • 2 tsp. salt
  • 1 to 2 tsp. black pepper
  • 1/4 to 1/2 tsp. poultry seasoning
  • 1 c. margarine
  • chicken broth
  • chicken

Instructions

  1. Saute chopped celery, chopped onion, and chopped parsley in margarine until tender.
  2. Mix the sautéed vegetables and herbs with cubed cornbread and bread, adding enough chicken broth to achieve a soft texture.
  3. Season the mixture with salt, black pepper, and poultry seasoning if desired.
  4. Transfer the dressing to a baking dish and bake at 350°F for about one hour.
  5. Season the chicken as desired and bake for one hour or until fully cooked.
