A colorful baked fruit casserole featuring apricots, pineapples, peaches, and pears, topped with a sweet sherry glaze. Perfect as a fruit side or light dessert.

Ingredients

  • 1 can apricot halves
  • 1 can sliced pineapple
  • 1 can peach halves
  • 1 can pear halves
  • 1/2 stick margarine
  • 1 tablespoon flour
  • 1/4 to 1/2 cup sugar
  • 1 tablespoon sherry extract

Instructions

  1. Drain the canned fruits and save the juice.
  2. Arrange the drained fruits in a large casserole dish, alternating to produce a colorful pattern.
  3. Set aside the arranged fruit.
  4. Melt the margarine in a pan.
  5. Blend in flour, fruit juice, and sugar, then cook over medium heat, stirring constantly, until the mixture thickens.
  6. Remove from heat and stir in the sherry extract.
  7. Pour the sauce over the arranged fruit.
  8. Garnish with cherry halves.
  9. Refrigerate the casserole overnight.
  10. Bake in a preheated 350°F (175°C) oven for 45 minutes.
  11. Serve hot as a side dish.
