Ingredients

  • 1 lb. ricotta cheese
  • 1/2 lb. shredded mozzarella
  • 3/4 cup Parmesan cheese
  • 1/4 cup Parmesan cheese (reserved for topping)
  • 2 eggs
  • 1 tsp. parsley flakes
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine ricotta cheese, shredded mozzarella, Parmesan cheese, eggs, parsley flakes, salt, and pepper in a bowl and mix well.
  3. Pour 1/2 cup spaghetti sauce into an 11 x 7-inch baking dish.
  4. Fill each manicotti shell with about 3 tablespoons of the cheese mixture and arrange them in the dish over the sauce.
  5. Pour remaining spaghetti sauce over the filled shells and sprinkle with the remaining Parmesan cheese.
  6. Bake for 45 minutes or until bubbly and golden.
