Ingredients

  • 3 large tomatoes
  • 1 (10 oz.) pkg. frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1/8 teaspoon basil
  • 1/8 teaspoon pepper

Instructions

  1. Remove pulp from tomatoes, leaving a 1/4-inch shell.
  2. Combine the tomato pulp, cooked and drained peas, grated Parmesan cheese, bread crumbs, basil, and pepper in a medium bowl. Mix lightly.
  3. Fill the tomato shells with the mixture.
  4. Arrange the filled tomato shells in a lightly greased 10 x 6-inch baking dish.
  5. Bake at 350°F for 30 to 45 minutes.
