Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup soft butter or margarine
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 egg
  • 1 (8 oz.) can crushed pineapple in unsweetened pineapple juice
  • whipping cream

Instructions

  1. In a bowl, mix the flour, sugar, butter, and salt with a fork until the mixture resembles coarse crumbs.
  2. Remove 1/2 cup of the crumb mixture and set aside for topping.
  3. Mix cinnamon into the remaining crumb mixture and set aside.
  4. Stir baking powder into the remaining crumb mixture.
  5. Whisk the egg with the crushed pineapple and its juice, then mix into the crumb mixture with the baking powder.
  6. Turn the mixture into a lightly buttered 1 to 1 1/2-quart round casserole or souffle dish.
  7. Top with the reserved crumb mixture.
  8. Bake at 350°F (175°C) for 40 to 45 minutes or until the center is set but not dry.
  9. Garnish with crushed pineapple and mint sprigs before serving.
  10. Serve warm, spooned into dessert dishes, with whipped cream passed at the table.
