Ingredients

  • 2 baking potatoes, well scrubbed, unpeeled
  • 1 Tbsp. olive oil
  • salt
  • ground pepper
  • 1 tsp. chives
  • 1 tsp. parsley

Instructions

  1. Preheat oven to 400°F.
  2. Oil 2 nonstick baking sheets with olive oil.
  3. Cut potatoes into 1/8-inch thick slices.
  4. Place potato slices in a bowl and toss with olive oil to coat evenly.
  5. Season with salt and ground pepper to taste.
  6. Arrange potato slices on the prepared baking sheets.
  7. Bake until crisp and brown, about 20 to 25 minutes.
  8. Remove from oven, transfer to a serving dish, and sprinkle with chopped chives and parsley.
