Ingredients

  • 1 to 2 lb. cod fillets
  • 3/4 lb. cooked medium shrimp, chopped
  • mayonnaise
  • 1 to 3 stacks Ritz crackers
  • 1 stick margarine, melted

Instructions

  1. Place cod fillets in a casserole dish.
  2. Brush the fillets with mayonnaise to coat them thinly.
  3. Mix crushed Ritz crackers with melted margarine and chopped shrimp.
  4. Spread half of the crumb mixture over one side of the fillets.
  5. Fold the fillets over to enclose the filling.
  6. Top the folded fillets with the remaining crumb mixture.
  7. Bake at 350°F for 1 hour or until the fish flakes easily.
