Baked Tofu

Ingredients

  • 1 block tofu, drained and mashed, squeeze out water
  • 1 c. ground pork
  • 1 c. fish cake mix (surimi)
  • 1 can cream of mushroom soup
  • 1/2 c. round or green onion, chopped
  • 1 small carrot, grated
  • 2 eggs, slightly beaten
  • 3/4 c. bread crumbs (save 1/4 c. for top)
  • 2 Tbsp. shoyu
  • 1 tsp. salt

Instructions

  1. Mix
  2. all ingredients together in a casserole.
  3. Top with 1/4 cup bread crumbs.
  4. Bake, covered, for 1 hour at 375°.
