Ingredients

  • 1 red snapper (about 3 lb.)
  • 2 bay leaves
  • 3 Tbsp. onion, minced
  • 1 cup red pepper, chopped
  • 2 to 3 Tbsp. fresh parsley, chopped
  • 1/2 tsp. dry thyme
  • 3 to 4 tomatoes, peeled and chopped
  • 1/2 cup dry white wine
  • juice from 1 lemon
  • salt to taste
  • pepper to taste

Instructions

  1. Have the head and fins removed from the fish.
  2. Crumble bay leaves and place inside the cavity of the fish.
  3. Place the fish in a lightly greased lined baking pan.
  4. Combine remaining ingredients—onion, red pepper, parsley, thyme, tomatoes, white wine, lemon juice, salt, and pepper—and pour over the fish.
  5. Bake uncovered in a preheated oven at 350°F for about 25 minutes, basting often with sauce until the fish flakes easily when tested with a fork.
