Ingredients

  • olive oil
  • study fish (such as tuna) in uniform pieces
  • canned or fresh pineapple chunks
  • onion chunks
  • red bell pepper chunks

Instructions

  1. Use wooden or metal skewers.
  2. If using wooden skewers, place them in water for 30 to 60 minutes to prevent burning. Brush skewers with oil.
  3. Alternately thread fish, pineapple, onion, red bell pepper, and green bell pepper onto skewers.
  4. Brush the skewers with oil.
  5. Place on a hot grill and turn several times during cooking until the fish is done and vegetables are crisp-tender.
