Ingredients

  • 2/3 cup balsamic vinaigrette salad dressing
  • 1/4 cup ketchup
  • 1 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 4 chicken leg and thigh quarters (3-4 lb.)

Instructions

  1. In a large resealable plastic food storage bag, combine balsamic vinaigrette, ketchup, dried oregano, and pepper.
  2. Add chicken leg and thigh quarters to the bag, seal, and turn to coat with the marinade.
  3. Refrigerate for 8 hours or overnight.
  4. Preheat oven to 425°F.
  5. Transfer chicken to a roasting pan, skin side up.
  6. Discard the marinade.
  7. Roast until the meat is no longer pink near the bone, about 40 minutes, covering loosely with foil if the skin browns too quickly.
  8. Let stand for 5 minutes before serving.
