  • 1 whole chicken breast, deboned, skinned, and diced
  • 1 Tbsp. butter or margarine
  • 4 large firm ripe tomatoes
  • 3/4 c. wheat germ
  • 1/3 c. chopped green onion
  • 1/2 c. chopped green pepper
  • 3/4 tsp. curry powder
  • 1/2 tsp. thyme leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • avocado wedges
  • ripe olives

Instructions

  1. Saute the diced chicken in butter until tender, about 5 minutes.
  2. Cut a thin slice from the tops of the tomatoes and set aside.
  3. Scoop out the pulp from the tomatoes, leaving the shells intact.
  4. Dice the tomato tops and pulp; drain well.
  5. Combine the cooked chicken, chopped tomato tops and pulp, wheat germ, chopped green onion, chopped green pepper, curry powder, thyme leaves, salt, and pepper.
  6. Mix all ingredients thoroughly.
  7. Spoon the mixture into the tomato shells.
  8. Serve on a bed of lettuce, garnished with avocado wedges and ripe olives if desired.
