Ingredients

  • 2 Tbsp. margarine or butter
  • 1 medium onion, sliced
  • 2 ribs celery, sliced
  • 3 c. chopped cooked turkey
  • 2 c. coarsely chopped green cabbage
  • 1 can (14 1/2 oz.) tomatoes, cut up
  • 1 can (15 1/2 oz.) kidney beans
  • 2 cans (13 3/4 oz.) chicken broth
  • 1 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 2 c. buttermilk baking mix
  • 2/3 c. milk

Instructions

  1. Melt margarine in a large saucepan or Dutch oven over medium heat.
  2. Add onion and celery; cook, stirring occasionally, until crisp-tender.
  3. Add turkey, cabbage, tomatoes, beans, broth, thyme, and salt.
  4. Bring to a boil over high heat.
  5. Reduce heat, cover, and simmer for 20 minutes or until cabbage is tender.
