Ingredients

  • 1/2 cup water
  • 1/3 cup honey
  • 1 egg or 2 egg whites
  • 1 1/3 cups mashed ripe bananas
  • 1 cup whole wheat flour
  • 1 cup plus 2 tablespoons all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. With an electric mixer, blend water and honey.
  3. Beat in the egg or egg whites.
  4. Add mashed ripe bananas and blend in.
  5. In another bowl, combine whole wheat flour, all-purpose flour, baking powder, and salt.
  6. Add dry ingredients to banana mixture and stir in chopped walnuts.
  7. Pour batter into a greased loaf pan.
  8. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted in the center comes out clean.
  9. Cool on a wire rack for 10 minutes, then remove from pan and cool completely.
