Ingredients

  • 3 1/2 cups sugar
  • 1 cup half and half
  • 1/4 cup butter
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3 tablespoons light corn syrup
  • 1 cup mashed bananas

Instructions

  1. Combine all ingredients except vanilla and nuts in a heavy saucepan.
  2. Cook, stirring constantly over moderate heat until the mixture reaches the soft ball stage.
  3. Remove from heat and stir in vanilla and nuts.
  4. Beat the mixture until it becomes thick and glossy.
  5. Pour into a buttered 8-inch pan and let it cool until firm.
  6. Cut into squares and serve.
