Ingredients

  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 3/4 cups sifted flour
  • 2 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat shortening until creamy and glossy.
  3. Gradually add sugar, beating until light and fluffy after each addition.
  4. Add eggs and beat until thick and pale lemon color.
  5. Sift dry ingredients; add alternately with mashed bananas.
  6. Blend thoroughly after each addition.
  7. Pour batter into a greased loaf pan.
  8. Bake in preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before removing from pan and slicing.
