Ingredients

  • 1 lb. mixed dried fruit and nuts, chopped
  • 1 1/4 cups strong brewed tea
  • 1 cup packed brown sugar
  • 2 3/4 cups self-rising flour
  • 1/2 cup milk
  • 1 egg, beaten
  • 3 Tbsp. orange marmalade
  • 2 tsp. cinnamon

Instructions

  1. Place fruit and nuts in a large bowl.
  2. Pour tea over fruit. Add brown sugar and mix well.
  3. Cover fruit mixture and let stand overnight at room temperature.
  4. Preheat oven to 325°F (160°C).
  5. Prepare a 9 x 5 x 3 inch loaf pan with cooking spray or grease.
  6. Add remaining ingredients (flour through cinnamon) to soaked fruit.
  7. Stir until combined.
  8. Pour batter into prepared loaf pan.
  9. Bake in preheated oven for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
