Ingredients

  • 1 chicken, cut up
  • 1/2 cup soy sauce
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 3 to 4 cloves garlic, minced
  • 1 tablespoon peanut oil
  • 1/4 teaspoon red pepper (optional)

Instructions

  1. Place chicken in a dish.
  2. Sprinkle with ground ginger, black pepper, and red pepper if using.
  3. Pour soy sauce and peanut oil over chicken.
  4. Cover with a tight-fitting lid.
  5. Shake until chicken is well-saturated.
  6. Place in refrigerator to marinate.
  7. Light coals in grill and wait until they are grey, about 45 minutes to 1 hour.
  8. Occasionally shake chicken while marinating.
  9. Place chicken on grill and cook over medium heat for about 1 1/4 hours.
  10. Baste occasionally with remaining marinade.
  11. Discard remaining marinade.
  12. Serve chicken on a bed of steamed rice and garnish with pineapple slices if desired.
