Instructions
- Place chicken in a dish.
- Sprinkle with ground ginger, black pepper, and red pepper if using.
- Pour soy sauce and peanut oil over chicken.
- Cover with a tight-fitting lid.
- Shake until chicken is well-saturated.
- Place in refrigerator to marinate.
- Light coals in grill and wait until they are grey, about 45 minutes to 1 hour.
- Occasionally shake chicken while marinating.
- Place chicken on grill and cook over medium heat for about 1 1/4 hours.
- Baste occasionally with remaining marinade.
- Discard remaining marinade.
- Serve chicken on a bed of steamed rice and garnish with pineapple slices if desired.
