Ingredients

  • 1 opossum, dressed
  • 1 1/2 cups vinegar
  • 1 tablespoon salt
  • 2 teaspoons black pepper
  • 4 tablespoons ketchup
  • 1 teaspoon garlic powder

Instructions

  1. Place the opossum in a baking pan lined with aluminum foil.
  2. Prepare the barbecue sauce by combining vinegar, salt, black pepper, ketchup, and garlic powder.
  3. Baste the opossum with the sauce.
  4. Cover the pan and bake at 350°F for 2 1/2 hours, basting frequently with the sauce.
  5. Uncover the meat and cook further until browned.
