Instructions
- Mix water, butter, and salt in a medium saucepan.
- Heat just to boiling.
- Immediately remove from heat and add the flour all at once.
- Stir with a wooden spoon until the mixture forms a ball.
- Return to medium heat and cook, stirring constantly until the paste has dried slightly.
- Remove from heat and let cool for 5 minutes.
- Beat in eggs one at a time, waiting until each is incorporated before adding the next.
- When each egg is added, the mixture will separate slightly and look like Southern dumplings.
- Continue beating until the mixture looks like mashed potatoes.
