Basic Pastry Puffs

Light, airy pastry puffs with a crisp exterior and tender interior, perfect for appetizers or fillings, suited for both sweet and savory dishes.

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

Instructions

  1. Mix water, butter, and salt in a medium saucepan.
  2. Heat just to boiling.
  3. Immediately remove from heat and add the flour all at once.
  4. Stir with a wooden spoon until the mixture forms a ball.
  5. Return to medium heat and cook, stirring constantly until the paste has dried slightly.
  6. Remove from heat and let cool for 5 minutes.
  7. Beat in eggs one at a time, waiting until each is incorporated before adding the next.
  8. When each egg is added, the mixture will separate slightly and look like Southern dumplings.
  9. Continue beating until the mixture looks like mashed potatoes.
