Ingredients

  • 1 cup chopped walnuts
  • 1/2 cup mixed glace fruit
  • 1/4 teaspoon grated orange peel
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon freeze-dried coffee
  • 1/2 cup butter or margarine
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1/3 cup honey
  • 1/2 cup sourdough starter
  • rum glaze

Instructions

  1. Mix chopped walnuts, mixed glace fruit, and grated orange peel in a bowl.
  2. Combine flour, baking soda, allspice, nutmeg, and freeze-dried coffee in a separate bowl.
  3. Sprinkle the flour mixture over the fruit and nut mixture and toss to combine.
  4. Cream the butter and brown sugar until fluffy in a large mixing bowl.
  5. Beat in the beaten egg until well incorporated.
  6. Add honey and sourdough starter alternately with the flour and fruit mixture, mixing well after each addition.
  7. Spread the dough evenly on a greased jelly roll pan.
  8. Bake in a preheated 375°F (190°C) oven for 15 minutes or until done.
  9. Remove from oven and frost with rum glaze.
  10. Let cool, then cut into bars to serve.
