Ingredients

  • 1 1/3 cups milk
  • 7 tablespoons flour
  • 6 tablespoons butter
  • 1 teaspoon salt
  • 4 egg yolks
  • 4 egg whites

Instructions

  1. Make a white sauce by melting butter, then stirring in flour and milk until smooth and thickened.
  2. Beat egg yolks until thick and lemon-colored, then add to the white sauce and mix well.
  3. Beat egg whites until stiff peaks form, but not dry.
  4. Gently fold the beaten egg whites into the egg yolk and white sauce mixture.
  5. Pour the mixture into an ungreased casserole dish.
  6. Bake in a cold oven at 325°F for 1 hour until puffed and lightly golden.
  7. Remove immediately from the oven before it collapses and serve promptly.
