Basic Irish Bread

A hearty Irish bread with a tender crumb, lightly sweetened and full of subtle spice and raisins, perfect for breakfast, snack, or alongside hearty stews.

Ingredients

  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup sugar
  • 2/3 cup spice (optional)
  • 2/3 cup raisins (optional)
  • 3/4 stick melted margarine
  • 2 eggs
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Coat the sides of the bread pan with melted margarine, then pour the remaining melted margarine into a blender.
  3. In a separate bowl, mix the dry ingredients including flour, baking powder, baking soda, salt, sugar, spice, and raisins.
  4. Add eggs and buttermilk to the blender with the melted margarine and blend until well combined.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared bread pan and bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before removing from the pan and serving.
