Ingredients

  • 2 cups sifted cake flour
  • 1 1/4 cups sugar
  • 1/2 cup soft shortening
  • 1 1/4 teaspoons vanilla
  • 1/4 cup milk
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°F. Grease and flour 2 to 4 cake pans.
  2. Sift together the cake flour, sugar, baking powder, and salt into a large bowl.
  3. Add the soft shortening to the dry ingredients.
  4. Pour in 1/2 cup milk and vanilla extract. Beat on low to moisten the mixture, then beat for 2 minutes on medium speed, scraping the bowl as necessary.
  5. Add the eggs and 1/4 cup milk. Beat for 1 1/2 minutes on medium speed.
  6. Divide the batter evenly into the prepared pans.
  7. Bake until done, approximately 25 to 30 minutes for 2 layers. Adjust baking time if using thinner layers.
  8. Cool the cakes slightly before removing from pans. Cool completely before icing.
