- Thaw fish if frozen.
- Turn under any thin edges of fish.
- Arrange thicker portions of fish fillets toward the outer edges of a 12 x 7 1/2 x 2-inch baking dish (or use an 8 x 8 x 8-inch dish for low wattage ovens).
- Brush fish with buttermilk or yogurt.
- In a small mixing bowl, melt margarine on high power for about 30 seconds until melted.
- Stir in crushed stuffing mix, salt, and red pepper.
- Spoon stuffing mixture over the fish fillets.
- Cook uncovered on high for 4 to 7 minutes (or 7 to 9 minutes in low-wattage ovens) until the fish flakes easily with a fork.
- Give the dish a half-turn after 3 minutes of cooking.
