Ingredients

  • 1 lb. fish fillets
  • 2 Tbsp. buttermilk or plain low-fat yogurt
  • 1 Tbsp. margarine
  • 1/2 cup corn bread stuffing mix
  • 1/8 teaspoon salt

Instructions

  1. Thaw fish if frozen.
  2. Turn under any thin edges of fish.
  3. Arrange thicker portions of fish fillets toward the outer edges of a 12 x 7 1/2 x 2-inch baking dish (or use an 8 x 8 x 8-inch dish for low wattage ovens).
  4. Brush fish with buttermilk or yogurt.
  5. In a small mixing bowl, melt margarine on high power for about 30 seconds until melted.
  6. Stir in crushed stuffing mix, salt, and red pepper.
  7. Spoon stuffing mixture over the fish fillets.
  8. Cook uncovered on high for 4 to 7 minutes (or 7 to 9 minutes in low-wattage ovens) until the fish flakes easily with a fork.
  9. Give the dish a half-turn after 3 minutes of cooking.
