Bean Thread Salad Recipe

Ingredients

  • 4 ounce Bean thread vermicelli
  • 2 Tbsp. Lime juice
  • 1 Tbsp. Fish sauce
  • 1 Tbsp. Sugar
  • 1/2 tsp Roasted sesame oil
  • 1/2 c. Peanuts, toasted and minced fine
  • 3 x Scallions, minced fine
  • 1/2 sm Carrot, minced fine
  • 1/4 c. Cilantro, minced fine
  • 1/8 c. Mint, minced fine

Instructions

  1. Bring a pot of water to boil.
  2. Pour over the vermicelli.
  3. Let it sit for a few min till it softens and becomes translucent/soft.
  4. Drain water and rinse with cool water.
  5. Allow to drain.
  6. In a small bowl, mix the lime juice, fish sauce and sugar.
  7. Microwave for 30 seconds.
  8. Stir to finish dissolving the sugar.
  9. Add in the sesame oil.
  10. In a serving bowl, combine the noodles, sauce, peanuts, scallions, carrot, cilantro and mint.
  11. Mix well to combine.
  12. Taste for seasoning and correct.
  13. For a spicy version, mince a jalapno and add in to taste to the sauce to before microwaving.
  14. Serve at room temp.
  15. or possibly chill.
