Ingredients

  • 1 lb. cannellini beans
  • 3 garlic cloves, crushed
  • 4 ripe tomatoes, peeled and chopped
  • salt and freshly ground pepper
  • 6 Tbsp. extra virgin olive oil
  • 3/4 cup fresh sage

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the crushed garlic and fresh sage; sauté until fragrant.
  3. Add the peeled and chopped tomatoes and simmer gently for 20 minutes.
  4. Add the cannellini beans, cover, and cook over very low heat for 30 minutes.
  5. Season with salt and freshly ground pepper to taste. The dish should have the consistency of a soup.
