Tabooly Salad is a refreshing Middle Eastern dish featuring bulgur, fresh herbs, and tomatoes, dressed with lemon and olive oil, perfect for light meals or gatherings.

Ingredients

  • 1 c. wheat (bulghur; fine or coarse)
  • 1 bunch green onions
  • 2 bunches parsley (leaves)
  • 5 tomatoes
  • 3 lemon juices
  • 1/4 c. olive oil

Instructions

  1. Wash vegetables and chop them finely.
  2. Wash and soak wheat (bulgur) for 10 to 12 minutes.
  3. Squeeze water from the soaked wheat and add it to the chopped vegetables.
  4. Add olive oil, salt, pepper, lemon juice, and chopped tomatoes.
  5. Mix everything well to combine.
