Green Gazpacho

A vibrant, chilled green gazpacho blending fresh grapes, avocado, cucumber, and herbs, perfect for a refreshing summer appetizer or light lunch.

Ingredients

  • 1 c. green grapes
  • 1 ripe avocado
  • 3/4 c. peeled, chopped cucumber
  • 1/2 c. chopped green bell pepper
  • 1/2 c. chopped celery
  • 1/2 c. chopped scallions
  • 1 1/2 c. white grape juice
  • 1 Tbsp. fresh lime juice
  • 2 Tbsp. chopped fresh mint or lime zest
  • salt
  • ground white pepper

Instructions

  1. Puree fruit and vegetables in small batches in a food processor, adding white grape juice as necessary to keep the blade from clogging.
  2. Do not puree completely; the gazpacho should be chunky.
  3. Transfer the mixture to a bowl; add the remaining grape juice, lime juice, chopped mint, salt, and white pepper to taste.
  4. Cover and chill for at least 4 hours before serving.
  5. Garnish with fresh mint sprigs before serving.
